New life for former Pizza Hut building in Wellsville - Daily Reporter
I was in the middle of typing a story on new developments on Main Street in Wellsville this morning when the Daily Reporter arrived...and (already) had the story. Here is the Daily Reporter story by Regional Editor Chris Potter...The For Sale sign has been taken down, but that was just the beginning. It’s out with the old to make way for the new at the former Pizza Hut location on Wellsville’s Main Street. The building is in the beginning stages of a top-to-bottom renovation, one that will transform the old Pizza Hut into a fresh dining option for the area. The restaurant will be an expansion of Belfast’s popular Still Water Inn, owned by Dave Drury for the last six years. Drury and his fiancé, Anna Joyce, have been searching for a second Still Water location for the last few years. The chance to expand in Wellsville was the perfect opportunity, the couple said, especially given the large parking lot and the recent progress made along that stretch of Main Street. Drury and Joyce provided the Daily Reporter with a glimpse inside the building Wednesday. A few vestiges of the old Pizza Hut remained, but not for much longer. “We’re going to open up the kitchen and take a wall down for some space. Pizza ovens are massive,” Joyce said. “We’ll have an all-new kitchen. We’re going to put in a small bar, enough for a guy who wants to come in and have a burger and a beer by himself. We don’t want to rule him out as a customer. “Out here (in the main dining area) it’s going to be set up similar with the booths. We’re going to have a little bit more seating because we won’t have the salad bar like they did. We’re going to update the finishes so they’re new outside and inside.” The building was constructed in 1978. Pizza Hut shuttered the Wellsville location in late September of 2016, and the building has sat vacant since then. By the time the renovations are complete, the building won’t have much of that signature Pizza Hut look any longer. “We’re going to resurface the outside and get rid of the Pizza Hut windows,” Drury said. “We’re going to give it a cleaner look.”
Pizza will still be a staple, however. Drury’s family operates pizza shops in the Rochester area, experience he plans to put to use at the new Still Water location.
“We have to put in a whole new cook line to accommodate the menu items we want to do, plus pizza,” Drury said. “We feel a town this size can support two if not more pizza shops. We want to go in that direction to a certain extent, especially with my background. We’re excited too because it’s an opportunity to be on this end of town and get this end of town growing.”
In addition to pizza, the new restaurant will offer Belfast Still Water staples like wings, pastas, burgers, specialty subs and sandwiches. The restaurant — tentatively dubbed the Still Water Pizza and Grill, although that could change — also plans to deliver.
“We’re going to combine a traditional pizzeria with some of the best-selling items from the Still Water,” said Joyce. “They have kind of a cult following for some of their menu items up there. We’ll have delivery. There’s not a ton of delivery options around here. We’ll have some outdoor dining, and we’ll have a beautiful garden over here soon. It’s exciting times for this end of Main Street.”
Joyce referred to the Fassett Greenspace Project, which plans to spruce up the neighboring lot with art, gardens and landscaping. Village officials are also hoping to receive a grant in the spring that will transform the former Burrous Building at 23 North Main into a hub for village and town offices, plus housing on the upper floors.
Add it all together, and the south end of Main Street could have a very different look and feel in the not too distant future.
“It should create quite a bit more foot traffic on this end of town if the village offices occupy the former Burrous Building,” Drury said.
“It would’ve been a shame to see this building fall into disrepair,” added Joyce, who also manages the Wellsville Country Club. “Hopefully some other businesses will spring up down here too in some of these storefronts once we all get things up and running.”
The new Still Water will likely be open seven days a week and employ between 15-20 people in some capacity or another. The hope is to open in early July, depending on how quickly renovations move along.
“We’d love to be open by Balloon Rally, and if not then, definitely by football season,” Joyce said. “That’s our target.”
Patrons can expect a welcoming atmosphere.
“It will be similar to the Still Water,” Drury said. “I wouldn’t go as far as to say it’s going to be a sports bar by any means, but it’s certainly going to have TVs. It won’t be a stagnant environment. It will be mostly family dining, a place where anyone can feel welcome. We’re excited.”
